SLI is probably 1.85 overall where it scales. Not quite a doubling. If you are sensitive to micro stutter, it will drive you nuts. And if you play older games, you may be playing on 1 GPU with the other going along for the ride for a lot of the time.

The issue is that the GTX 680 is cheaper than what the guy paid for his sandwich.

Yeah, I know the EVGA dual card is expensive and I wouldn't encourage anyone to purchase it over regular SLI, especially at this stage in Fermi's life.

SLI is "close enough" to doubling, roughly speaking. as you said, on average 85% better than single card performance. A new card should double SLI and add 15 - 25% on top for good measure.

microstutter can happen on single cards as well as multi-gpu cards and is worse on AMD cards than it is nvidia. It doesn't affect me much, thankfully.

Older games can always have SLI-AA enabled to make use of the second GPU's power, or you can tinker with the SLI flags and modes to find a setting that works.

You need to get your OC on with that 470, then turn around and punch him in the mouth.

A 470 can easily best a 560ti, once both are overclocked. The 560ti is a MHz card, the 470 is an underclocked power house.

You can easily get a pair of GTX 560s for $300 total. Overclock them a bit and they would beat the dual card for 1/2 the price.
