I just don't see why you need more performance, every game I've played with this secondary rig has been able to max it or get close enough that I don't really care.
It's easy to get caught up in the more is better stigma of tech sites.

At the end of the day though, why should I pay another $300+ just to run a few old games that I've already logged a lot of hours on? Generating Bitcoins is addictive and once you get a certain hash rate you always want more. Ideally I would like to max out my 1000w PSU and get something like 2000mhash/sec.

A couple more fps aren't going to change your experience in those titles, you can't go any higher on the settings either. The fps grail is a myth imo, if you can keep it above 30 in most engines you won't be able to tell a difference. If you're running a program such as FRAPS or OSD that displays fps, I suggest you turn it off, then play for a bit, turn down a couple settings, then decide if you noticed a difference in frame fluidity or not. Counters could be deceiving your perceiving.

Counters could be deceiving your perceiving. Have you tried Crysis 2 with the DX11 patch and the high-res textures? The framerate really dips for me in that game at 1080p depending on the scene. If I do get a new GPU it's going to have to be a hot deal. I will keep looking. I do notice a substantial difference going from 45fps up to 60fps by the way. Perhaps I'm fussy.

Or perhaps you're influenced by your frame counter, and yes Crysis 2 maxed out is fine for me on a single 470.

That's a problem, since the 7970 GHz edition can't even maintain 60 min in Crysis.
Perhaps waiting for AMD's 8xxx series is a better option.
