You're right about jiujitsu - Fedor's first real loss ever was due to submission to perhaps the world's best master at jujitsu!
I'm thinking that the fight with Cro Cop that I posted in the OP was actually handicapped because Fedor was fighting with a broken hand from a previous fight -- he didn't have much grappling power otherwise he would've made attempts at submission. See how his grip was very weak. IIRC, he had to get the hand "re-broken" by the doctor so that it'd heal the right way.

Then google for all of the fight videos using their names (some are not on youtube but on some other sites, but google should show them by simply typing in "Fedor vsName video")
A real funny one was the one with the 7' 2" giant (Hong Man Choi):
