Evolution is what happens when an organism modifies its genome in response to outside influence. You can see it happening all the time in bacteria and viruses like influenza and HIV.
It also happens in more complex organisms like ourselves. Just look at bird cat and dog breeders. They get the results they do by forcing genetic change.
